Today, I’m sitting on my brother’s back porch in Asheville, North Carolina, deciding how I can say thank you and goodbye to the people I’ve worked with and shared information with for the past few years.

When it comes to holiday gift giving, everyone has a relative who is hard to buy for — Aunt Sally, who has one of everything, your brother-in-law, who swears every year that he doesn’t need anything, your sister’s kids who live on the opposite coast and seem to grow three sizes each year — but when it comes to a friend or relative who has celiac disease or non-celiac gluten sensitivity and follows a gluten-free diet, it’s a wee bit more challenging.

The foods that so many take for granted at their Thanksgiving meal can make someone with celiac disease or non-celiac gluten sensitivity very apprehensive. Sources of gluten can often be hidden – flavor enhancers injected into turkeys that contain a chemical derivative of wheat, or the flour used as a thickening agent in gravy, for example.
